Orange Date Pecan Cookie Recipe

The orange date pecan cookie recipe turns out a perfect tender morsel that makes a great compliment to a hot cup of tea or coffee!

Ingredients

1 (10 ounce) package chopped dates

1 teaspoon grated orange rind

1 tablespoon orange juice

2 sticks (1 cup) of salted butter, softened

1 1/2 cups granulated sugar

1 large egg

1 teaspoon vanilla extract

2 1/2 cups all-purpose flour

1 1/2 teaspoons baking powder

1/2 teaspoon salt

1 cup finely chopped toasted pecans

9 x 5-inch loaf pan

Step 1: Line a 9 x 5-inch loaf pan with aluminum foil; set aside.

Step 2: In a food processor or with a knife, chop dates and orange rind finely. Mix chopped dates and orange rind into a small bowl with 1 tablespoon of orange juice; set aside.

Step 3: In a medium bowl, whisk together the flour, baking powder and salt; set aside.

Step 4: In a large bowl, beat butter on medium speed with an electric mixer for 30 seconds.

Step 5: Gradually add sugar until blended.

Step 6: Add egg and vanilla extract; beat well.

Step 7: Add flour mixture and beat until just blended.

Step 8: Divide dough into 3 sections.

Step 9: Knead 1/2 cup of chopped pecans into the first piece of dough. Press dough into prepared pan.

Step 10: Knead date mixture in 1 portion of dough. Press in pan over pecan dough.

Step 11: Knead remaining 1/2 cup of chopped pecans into remaining portion of dough. Press in pan over date dough.

Step 12: Cover dough and chill for at least 2 hours.

Step 13: Preheat oven to 350 degrees F.

Step 14: Lightly grease or spray cookie sheets with no-stick cooking spray; set aside.

Step 15: Invert loaf pan onto cutting board and discard aluminum foil..

Step 16: Cut dough crosswise into 1/4-inch slices. Place slices 1 1/2 inches apart onto prepared cookie sheets.

Step 17: Bake for 9-10 minutes or until lightly browned. Let cookies set for 1 minute before transferring to a cooling surface.
