Tomatoes are great, but short of chopping them up, making them into a soup, or making pasta sauce with them - we don't really have a clue. Well I'm here today to add a little variety back into your tomato cooking and show you 3 unusual and unique recipes for those fresh tomatoes you harvested from the garden.
Fresh Garden Salsa:
You usually don't think to make your own salsa, but it's remarkably easy and quick to make. You're going to need:
- 5 fresh garden tomatoes
- 1/2 cup chopped red onion
- 1/2 chopped fennel
- 1 tbsp chopped cilantro
- 1 tbsp chopped basil
- 1 tbsp chopped seeded jalapeno pepper
- 1 tbsp of orange juice
- 1 tbsp olive oil
- Salt and pepper to taste
I don't need to write preparation instructions for this - just chop and mix everything, then mix again. Serve with your favourite chips.
Roasted Cherry Tomatoes
Instead of just tossing them in a salad, try roasting these little baby tomatoes instead. Begin by tossing a pint of baby tomatoes with a tablespoon of olive oil, and sprinkling with salt and pepper. Place on a baking tray and roast on high for 5-7 minutes until the skins begin to split. Serve as a side dish with a sprinkling of your favorite herbs on top, like basil. It makes a great to the norm.
Vertical Tomato Salad
Whoever said salads have to be green and flat was simply unimaginative. Make this one vertical by slicing a variety of fresh tomatoes and stacking them. Drizzle with olive oil, sprinkle with your favourite herbs, and add salt and pepper to taste. Simply sublime, and definitely different.
