How to Make Quick and Easy Dinner Recipes

Your weekly grocery shopping list should include bulk items and multiple containers of sale items. Take advantage of sales items by stocking up when items you use frequently go on sale. Most recipes include simple items; a grain such as potatoes or rice, a vegetable, meat or other protein and a sauce. You can make up batches of these meals and freeze them for quick and easy dinners.
Here are a few quick and easy dinner recipes with noodles that take 30 minutes or less to prepare. Freeze or store the leftovers for a quick lunch.
Pad Thai Noodles:
8oz package of noodles
Frozen shrimp or prawns
(4oz) bean sprouts
2oz) tofu, cubed
2Eggs
1 tbsp garlic, chopped
¼ cup roasted peanuts, crushed
1 tbsp vegetable oil
1 jar Thai Kitchen Pad Thai sauce
1 tsp chives, chopped
2 tbsp lime juice
1 lime wedge.
To cook:
Cook the noodles in boiling salted water. Beat the eggs and pour into a frying pan with1 tbsp of oil, cook as you would an omelet. When done, roll up the egg and push to one side of the skillet. Add the shrimp and cook until pink, remove the eggs and shrimp from skillet and set aside. Brown the tofu and set aside.
Add the remaining oil to skillet and cook chopped garlic for 1 minute, add cooked noodles and Pad Thai sauce mix well.
Add the sprouts, tofu, shrimp, eggs, squeeze of lime juice, and chives. Heat for 3-4 minutes and serve Top with chives, peanuts and lime wedge.
Chicken Chow Mein:
Leftover cut up chicken, or chicken from a can
Hot cooked noodles
Chicken stock
2 tbsp. cornstarch
Frozen peas
Chopped garlic
Minced ginger
Soy sauce
Sauté garlic, ginger, peas and chicken in oil over medium heat. In a sauce pan add chicken stock and cornstarch and stir until thickened. Add sauce to meat mixture and mix in hot noodles. To serve, top each serving with soy sauce, sliced almonds or toasted sesame seeds. These quick and easy dinner recipes save time and make a delicious meal.
