Chicken Paella Recipe

This is very traditional Spanish dish that has to be eaten preferably at lunch or early dinner. It is really strong and it's full of different flavors. In the end is very simple to make, and if you like rice this recipe will enchant your taste.

You will need:
Olive oil (4 tablespoons)
Onion (1, chopped)
Garlic (2 cloves, minced)
Red bell pepper (1, chopped)
Chorizo sausage (4, cut into pieces)
Chicken breast halves (2, skinless, boneless and cut into 1 inch cubes)
Arborio rice (1 package or 12 ounce)
Chicken broth (5 cups)
White wine (1/2 cup)
Fresh thyme (1 sprig)
Saffron (1 pinch)
Salt and Ground black pepper (to taste)
Squid (2, cleaned and cut into 1 inch pieces)
Tomatoes (2, seeded and chopped)
Green peas (1/2 cup)
Shrimp (12 large, peeled and deveined)
Mussels (1 pound, cleaned and debearded)
Italian flat leaf parsley (1/4 cup chopped)
Lemon (8 slices, for garnish)
How to do it:
Take a paella pan and heat it over medium heat, place the olive to heat and the add the onion, garlic and pepper; cook them until they reach a golden brown color, now add the sausage, chicken and rice and leave to the fire for another 2 or 3 minutes, add 3 ½ cups of stock the wine and thyme leaves, also add the saffron; to season all of this add the salt and pepper, and bring to a boiling point, keep simmering for 15 minutes, do not forget to stir constantly. Now add the additional stock and use 2 more cubes is it becomes necessary; cook until the rice is done and add the squid, tomatoes and peas; leave all of this cooking for a few more minutes, finally add the mushrooms and the prawns on top, cover everything with foil for 3 to 5 minutes, finally remove the foil and serve all of it together, garnish everything with lemon wedges.
