Recipe for Simple and Easy Pesto
What You Need
  • ¼ cup walnuts or pecans
  • 2 Tablespoons pine nuts
  • 2 minced garlic cloves
  • 1 pinch ground nutmeg
  • ½ cup firmly packed fresh basil
  • ¼ cup firmly packed fresh parsley
  • ¼ cup virgin olive oil
  • ¼ cup grated Romano cheese
  • ¼ cup grated parmesan cheese
  • Salt and pepper to taste
How to Make It
Preheat oven to 350 degrees Fahrenheit. Place nuts on a baking sheet in a single layer and bake in oven for approximately 8 to 10 minutes.

Alternatively, you can toast the nuts in about 5 to 6 minutes while using no butter or margarine by heating them in a heavy, dry non-stick saucepan or skillet to saute on the stove rather than by heating up the oven.

After toasting the nuts and allowing them to completely cool place them, the minced garlic, nutmeg, basil and parsley in a food processor, whopper chopper or blender. While running this through the blender you will slowly add the virgin olive oil to the mix in a slow and steady stream. Process this mixture until it forms a soft paste.

Place blended mixture in a large bowl and then fold in the grated cheeses. You can store this in the refrigerator in a covered dish until time to serve. If you plan to store it in the refrigerator for more than a short time, consider adding a little olive oil to cover the top of the pesto to prevent it from drying out.
