Homemade Orange Marmalade Muffins Are a Sweet Start to Any Day

Ingredients

2 cups all-purpose flour (or half a cup of white and half a cup of wheat flour)
1/2 cup granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon taking soda
1/2 teaspoon salt
1/3 cup canola oil
1/2 cup fresh orange juice
1/2 cup orange marmalade
1 large egg
1 teaspoon pure orange extract
Extra sugar
Method
Heat oven to 400 degrees. Coat a muffin tin with baking spray and set aside. In a large bowl whisk together flour, sugar, baking powder, baking soda, and salt. In a medium bowl, whisk together canola oil, orange juice, marmalade, the egg, and orange extract. Add the wet ingredients to the dry and stir just until combined. Spoon batter into prepared muffin cups and sprinkle with sugar if desired. Bake 15-20 minutes, or until the edges of the muffins start to pull away from the pans. Cool for five minutes before removing muffins from the cups. Serve immediately. Makes 6 giant muffins.
