What you need:
  • 5 cups chicken broth
  • 1 cup half-and-half cream
  • 1 cup white sugar
  • 1 cup chopped green onions
  • 1 cup chopped spinach
  • 1/2 cup chopped parsley
  • 1/2 cup chopped fresh basil
  • 5 tablespoons butter
  • 2 tablespoons all-purpose flour
  • Salt and ground black pepper to taste
In a large saucepan, melt 3 tablespoons butter over medium-high heat then cook onions for 10 minutes or until tender. Stir in spinach, parsley and basil. Lower heat, cover and allow to simmer for 10 minutes. Carefully add chicken broth, sugar and half-and-half cream then simmer, covered, for 30 minutes more. Cook, stirring occasionally, for 20 to 25 minutes or until potatoes are tender. Dissolve the gravy mix with milk then pour mixture into the saucepan along with corn, chiles and cheese.
