Huevos Rancheros
Huevos rancheros are a delicious Mexican-style breakfast that can easily lend itself to many different variations. This recipe is just a guideline. Feel free to eliminate toppings or add a few new ones of your own.
2 eggs
1 soft tortilla shell
1/2 avocado, sliced
refried beans
shredded Mexican cheese
salsa
sour cream
oil or cooking spray
Start by coating the bottom of a frying pan with a little bit of oil or a shot of cooking spray. Heat it up on high for a few seconds, and then crack two eggs directly into the pan. While they are starting to fry, put the tortilla on a plate and spread the refried beans onto it. Sprinkle some shredded Mexican cheese on top and throw it in the microwave until the cheese melts.
At this point you are going to want to flip the eggs. You can get out a spatula and do this but what is the fun in that? If you used the right amount of oil and the bottom of the egg is cooked enough you should be able to shake the pan and have the half-fried egg move around a little bit without separating. Give it a few shakes to loosen it up and then try to flip them into the air and onto the other side.
While the other side of the egg is cooking you can grab the tortilla out of the microwave and start adding the slices of avocado. Slide the fried eggs onto the center of the plate and then add the salsa and sour cream on top. Enjoy!
Indian Deviled Eggs
Deviled eggs are a classic and delicious appetizer. This recipe mixes it up by adding a dash of Indian flavor! It is also a little healthier than traditional deviled eggs because the mayonnaise has been eliminated.
6 hard boiled eggs
1/2 large red onion, minced
1 tsp ground black pepper
1 tsp curry powder
3 tbsp fresh cilantro (also known as coriander), finely chopped
little bit of oil for frying
salt to taste
chutney for topping (optional)
After you have hard boiled the eggs, cut them in half lengthwise and carefully remove the yolk. Set aside the whites. Heat the oil in a pan and saute the onions until they turn clear. Stir in the pepper, curry, and cilantro. Once it is mixed well, add the egg yolks and mash it all up until it is smooth.
Notice we have yet to add the salt. A little bit of salt is essential for humans but we often tend to overdo it. Taste the mixture at this point and if it is good you can forgo the salt altogether. If not, stir in a little bit at a time until it suits your taste. Now you just carefully spoon the mixture back into the white. Top with your preferred chutney (mango chutney is delicious!) and serve. Viola!
Baked Vegetable Omelet
Omelets are an old egg standby. They are delicious and they are open to all kinds of variations. Here we mix things up a bit and bake the omelet instead of frying it. Baking almost always results in a fluffier and airy omelet. This recipe calls for a variety of vegetables, but feel free to get creative with it by adding your own favorite ingredients. Makes enough to feed four people.
1 cup shredded Monterey Jack Cheese
2 cups shredded cheddar cheese
2 cups broccoli, chopped
3 tomatoes, chopped
1 red onion, chopped
1 1/3 cup milk
1/3 cup flour
1/2 tsp salt
4 eggs
Start by heating the oven up to 350 degrees. Then layer the Jack cheese, vegetables, and cheddar in a square baking dish. 8"x8x2 is ideal.
Now beat the eggs with the milk, flour and salt until it is smooth and pour it over everything else. Then just bake for about 45 minutes, starting to check at about 30 to see how the egg mixture is setting. Let it cool for ten minutes and then serve it up!
