Preparing Quinoa For Breakfast

Preparing quinoa for breakfast is one of the things I look forward to in the morning. It's so easy but at the same time, I am assured that I am getting all the nutrients I need to jump start my hectic day.

If you buy unprocessed quinoa, you'll notice that it still has the coating on. You must get rid of this because it can taste really bitter that it might just end up in your garbage bag. The easiest method in preparing quinoa is to cook it like how you would cook rice. A cup of rinsed quinoa should be combined with 2 cups of water. Bring it to a boil and then turn down the heat to a low simmer. Cook it for about 15 minutes or until all the water is absorbed.
One of my favorite breakfast goodies is the quinoa cake recipe. You will need:
1 ½ cups quinoa flakes
½ cup tapioca starch
½ cup sorghum flour
¾ cup buckwheat
1 tsp baking soda
½ tsp sea salt
2 tsp finely ground cinnamon
2 eggs
½ cup extra virgin olive oil
1 cup brown sugar
¼ cup raw organic agave
2 tsp vanilla extract
¼ cup freshly squeezed orange juice
Preheat the oven at 350 degrees Fahrenheit and mix together the dry ingredients. In a separate bowl, beat the liquid ingredients together. Now add the dry ingredients mixture and whisk until everything is mixed finely.
Add a cup of grated carrots (optional), ½ cup of grated sweetened coconut and ½ cup of dried fruits of your choice (I like cranberries). Pour the cake batter into a baking pan and then bake it until the center is firm enough to touch. Insert a toothpick and if it comes out clean, it means it's cooked. Baking time is usually 25 to 35 minutes but you do not have to necessarily follow the time.
Wait for the cake to cool down. Do not slice the cake while it is still hot. I like to slice it after freezing it for about 30 minutes. This makes 16 slices and I eat this every breakfast.
