Grilled Chicken Salad with Seasonal Fruit is a great salad for every season and any time of the day. Ingredients
Chicken (skinless, boneless) breast halves - 1 pound
Pecans - 1/2 cup
Red wine vinegar - 1/3 cup
White sugar - 1/2 cup
Vegetable oil - 1 cup
Half minced onion
Ground mustard - 1 teaspoon
Salt - 1 teaspoon
Ground white pepper - 1/4 teaspoon
2 heads of Bibb lettuce - rinsed thoroughly, dried and shredded
Fresh strawberries (sliced) - 1 cup
Directions
Preheat the grill on high temperature.
Oil the grill grate lightly. Grill the chicken pieces for 8 minutes on each of the sides, until the juices come out clear. Take away from heat, let it cool, and then slice.
In the meantime, put pecans in a big dry skillet on medium-high heat. Cook the pecans by stirring repeatedly for about eight minutes until fragrance comes out. Take away from the heat, and keep aside.
Blend the sugar, red wine vinegar, onion, vegetable oil, pepper, mustard and salt in a blender. Continue blending until the mixture becomes smooth.
Place lettuce in serving platter. Use grilled chicken slices as toppings with pecans and strawberries. Sprinkle with your favorite dressing and serve.
You can use dried apricots also. For dressing, sweet vinaigrette will be great, as it complements both chicken and the fruits. You can use feta cheese as your topping.
