Recipe for Strawberry Banana Cheesecake
What You Need
  • 1/3 cup melted butter or margarine
  • 1 ½ cup graham cracker crumbs
  • ¼ cup powdered sugar
  • 2 packages softened cream cheese 8 ounce
  • 2 eggs
  • 2/3 cup sugar
  • 1 teaspoon vanilla flavoring
  • 1 pint fresh strawberries
  • ½ cup sugar
  • 1/8 teaspoon salt
  • ¼ cup water
  • ¼ cup cold water
  • 1 ½ Tablespoons cornstarch
  • 1 Tablespoon lemon juice
  • 2 firm bananas
How to Make It
Allow the cream cheese to soften by placing it onto the countertop about 20 minutes before preparation time.
Prepare a 9 inch spring form pan by coating it lightly with cooking spray and then set aside until needed.
Preheat oven to 350 degrees Fahrenheit.
Melt the butter or margarine and then add the graham cracker crumbs and powdered sugar. Stir to combine well and then press this mixture into the prepared 9 inch spring form pan. Form a rim around the crust by pushing some of the crust mixture up to about ¾ inch high inside the pan.
Using a medium size mixing bowl and an electric mixer you will add the softened cream cheese, the eggs one at a time while beating after each, the 2/3 cup sugar and the vanilla flavoring. Beat until light and fluffy. Pour this mixture over the graham cracker crust and then bake in the preheated oven for about 25 to 30 minutes or until the center of the dessert is set. Remove from oven and allow the dessert to cool.
To make the strawberry glaze for this cheesecake you will need to slice enough strawberries to make 1 level cup. Place the slices in a saucepan along with a ½ cup sugar, 1/8 teaspoon salt, and ¼ cup water. Bring to a boil and then cook for 3 minutes. Mix ¼ cup cold water with 1 ½ tablespoons cornstarch and then stir this mixture into the strawberry mixture. Cook until the mixture becomes thickened and then stir in the 1 tablespoon lemon juice. Remove from heat and allow the strawberry glaze to become cool.
Slice the bananas and then arrange them attractively over the top of the cheesecake. Garnish by drizzling the cooled strawberry glaze over the top. Place in the refrigerator to chill overnight or for at least 3 to 4 hours before cutting and serving.
