3 Top Tomato Recipes

Breakfast Tomato: Take a large tomato, slice off the top of the tomato - not too much just so you can get into it. Then take a teaspoon and scoop out the seeds and discard them. Take a slice of thin ham and lay into the tomato - push the middle of the ham in with the outsides draping off the tomato. Place this tomato on an oven baking tray (which must be oiled first). Take a small fresh egg and crack into the tomato. Place in the oven for 20 minutes until the egg has cooked. On the top of the tomato cut a slice of hard cheese like Cheddar, and then grill until melted.
Puff Pastry Tomato Slice: firstly you need to sun-kiss your tomatoes. Take an oiled baking sheet and place 10 tomatoes which have been cut in half - place on the tray seed up and drizzle with a little olive oil and season well with salt and pepper. You need small and sweet tomatoes for this dish. Tomatoes will vary from ovento oven, gas mark 6, allow approx 30 minutes but don't let them burn. Once they are cooked, take a sheet of ready roll puff pasty and place on another oiled baking tray. Brush the pastry with a little egg or milk and lay out the tomatoes on the top. Spring some stilton cheese amongst and on the tomoatoes. Drizzle with a little more olive oil and cook for apprx 45 minutes until the pastry has puffed up. Take out of the oven and put some fresh rocket on the top.

Tomato Salad: Slice up some beef tomatoes, mozzarella cheese and layout alternately on a plate. Take some pine curdles and toast slightly in a non stick frying pan - don't let them burn they will take only a few moments in a hot pan. Sprinkle over the salad and drizzle with one tablespoon of olive oil and a teaspoon of balsamic vinegar. Season with salt and pepper and serve.
