No Bake Cheesecake Recipe: How To Make A Banana Cheesecake

If you love cheesecake and you love bananas this is one recipe that you do not want to overlook. Just imagine the creamy sweet sensation of eating a cheesecake made of bananas. You can easily make a no bake cheesecake recipe to serve to your family and friends by following these simple directions. Of course, you can also adapt it to better suit you and your cravings for a sweet treat by using a pre-made pie crust.

Recipe for Banana Cheesecake
What You Need
  • ½ cup melted butter or margarine
  • 2 cups graham cracker crumbs
  • 1 package softened cream cheese 8 ounce
  • ½ cup sugar
  • 2 teaspoons ginger
  • 4 medium mashed bananas
  • 1 teaspoon lemon juice
  • 1 Tablespoon unflavored gelatin mix
  • 3 Tablespoons cold water
  • ½ pint whipping cream
  • Lemon juice
How to Make It
Remove the cream cheese from the refrigerator and place it on the counter about 20 minutes or so before preparation time in order for it to reach room temperature for blending.
Melt the butter or margarine and then add the graham cracker crumbs, stir to combine well. Press this mixture into the bottom and along the sides up to within about an inch from the rim of an 8 inch round baking pan or pie pan. Place in the refrigerator to chill while preparing the filling.
Using a medium size mixing bowl you will add the softened cream cheese, sugar and ground ginger. Mix well by blending on a high speed. Add the mashed bananas and the lemon juice in a separate bowl. After mixing stir this banana mixture into the cream cheese mixture and then mix well to combine.
Using a double boiler over cold water you will sprinkle the unflavored gelatin mix and stir to blend. Allow the unflavored gelatin mix about 5 minutes to dissolve. Place this mixture over simmering water in the double boiler. Stir occasionally while dissolving the gelatin. Add this gelatin mixture into the banana mixture and beat well.
Using a small mixing bowl and an electric mixer you will add half of the whipping cream and then beat until the mixture begins forming soft peaks. Fold this mixture into the banana mixture to combine. Pour the banana mixture over the crust in the 8 inch round baking pan or pie pan. Cover pan with plastic food wrap and then place in the refrigerator overnight to chill or for about 3 hours to allow the cheesecake to set firm.
Loosen the edges of the banana cheesecake while using a butter knife and then remove the dessert from the pan, while transferring the dessert to a serving dish.
Whip the remaining whipping cream until the mixture begins forming soft peaks. Spread this mixture evenly over the top of the cheesecake. Using a fork you can make a crisscross pattern in the whipped cream topping and then slice some more bananas in rounds, dip them in lemon juice to prevent browning and then arrange them around the edge of the cheesecake before serving.
