Salt - 1/2 teaspoon
Ground black pepper - 1/4 teaspoon
Dried oregano - 1/2 teaspoon
Four boneless, skinless chicken breast halves - minced in 1/4 inch thickness
Butter - 4 tablespoons
Olive oil - 4 tablespoons
Sliced mushrooms - 1 cup
Marsala wine - 1/2 cup
Cooking sherry - 1/4 cup
Directions
Take a shallow bowl or dish, mix the salt, pepper, flour and oregano together to blend them well in that bowl. Coat the chicken pieces with that flour mixture.
Take a large deep frying pan, Take olive oil and melt butter in that on medium heat. Put the flour-coated chicken in the pan, and fry them well until the pieces become lightly brown uniformly. Turn over the fried chicken pieces, and add mushrooms in that pan. Add some cooking sherry and wine. Put a lid on that pan to cover it; let the chicken simmer for 10 minutes, stir it once and cook until the pieces are no longer pink and juices come out from the pieces.
You can play around a bit with the ingredients to give it a different taste. You can avoid sherry and use more wine. If you serve it with angel hair pasta then it will certainly become a filling meal and you will get the appreciation for that.
