Recipe for Marinated Grilled Vegetable Pizza
What You Need
  • 1 diced garlic clove
  • 1/4 cup fresh basil
  • 2 teaspoons fresh thyme
  • 2/3 cup olive oil
  • 1/3 cup balsamic vinegar
  • 1/8 teaspoon pepper
  • 1/8 teaspoon salt
  • 1/2 cup thin sliced zucchini
  • 3/4 cup diced red bell pepper
  • 1 cup halved cherry tomatoes
  • Readymade pizza dough
  • 1 package shredded mozzarella 8 ounce
How to Make It
Using a large mixing bowl or a gallon size zip lock food bag add the diced garlic clove, fresh basil, fresh thyme, olive oil, balsamic vinegar, pepper and salt. Mix well by shaking the bag or stirring the ingredients in the large mixing bowl. Set aside until needed.

Prepare the fresh vegetables by rinsing with water and then slicing the zucchini, dicing the red bell pepper and cutting the cherry tomatoes into halves. Place the vegetables in the marinade mixture and then place in the refrigerator overnight or for at least 1 hour to marinade.

Prepare the pizza dough by following the directions on the package or by making your own homemade pizza dough. After preparing the pizza dough press it evenly onto a large pizza pan that you have lightly coated with cooking spray to prevent sticking. After forming the pizza crust sprinkle it with the shredded mozzarella cheese and then set aside until needed.

Remove the vegetables from the marinade while draining off any of the extra liquid marinade. Grill the vegetables on the grill or you can broil them in the oven for about 8 to 10 minutes.
Arrange the grilled vegetables on top of the layer of shredded mozzarella cheese. Preheat the oven to 425 degrees Fahrenheit and then bake for about 10 to 12 minutes or until the pizza is done.
