Easy Chicken Kabobs - Two Great Recipes

Chicken kabobs are great for the summer when you want to cook and eat outdoors. You can make most kabob recipes ahead of time and, because they are not cooked in fat, they are not bad for the waistline either.

Chicken Tikka Kabobs
This delicious recipe, which serves four people, is authentically Indian and the kabobs are served with a cucumber sauce as well as a spicy, tangy relish. This is a really impressive dish to serve to guests and it is very easy to make as well.
You can make the kabobs and relish several hours in advance if you want, then you just have to grill them when you are ready and take the sauce and relish out of the refrigerator to serve.
What you will need:
  • 4 chicken breasts
  • 1 cucumber
  • 2 chopped cloves garlic
  • 1 teaspoon turmeric
  • 1 teaspoon cayenne pepper
  • 1 teaspoon garam masala
  • Juice from 4 limes
  • 1/2 pint natural yogurt
  • 2 inch piece ginger, finely chopped
  • 1/4 pint water
  • 2 tablespoons chopped cilantro
  • 1 chopped de-seeded chili
  • 1 tablespoon chopped mint
  • 1 tablespoons white sugar
  • 4 chopped scallions
  • 1 chopped onion
  • Salt
How to make them:
Chop each breast into eight pieces. Combine the garlic, turmeric, cayenne pepper, garam masala, yogurt, ginger, and half the lime juice to make the marinade. Coat the chicken in the marinade and thread it on to skewers. Refrigerate the kabobs until you are ready to cook them.
Process the remaining lime juice with the water, cilantro, chili, mint, sugar, scallions, and onion in a food processor to make the relish, adding salt as necessary. Keep this in the refrigerator until serving.
Grill the prepared skewers on a hot grill pan for five minutes per side or until cooked through. Chop up the cucumber and combine it with a tablespoon of the relish. Serve them on a bed of rice with some of the cucumber salad. Spoon the rest of the relish over the top.
Chicken Satay Kabobs
This is a very simple recipe and you just need to combine all the ingredients, leave the mixture to marinate and then thread the chicken on to skewers. If you enjoy Indonesian satay recipes, you will like these tasty treats. Serve them with fries, salad or even on a bed of rice.
You have the choice of grilling or baking these satay kabobs, depending on the weather, and they are sure to come out delicious whichever cooking method you choose. Use a really creamy peanut butter for the best results.
What you will need:
  • 2 crushed cloves garlic
  • 1/2 cup soy sauce
  • 1 1/2 lbs chopped boneless chicken breast
  • 1 tablespoons hot pepper sauce
  • 2 tablespoons curry powder
  • 1 tablespoon brown sugar
  • 2 tablespoons peanut butter
How to make them:
Combine everything in a Ziploc bag and leave to marinate overnight. Thread the chicken on to skewers and grill the kabobs until done. Alternatively, you can bake them for about seventeen minutes at 450 degrees F.
